Ingredients
Fries
5-6 potatoes (Yukon Gold or Russet)
1 tbsp coconut sugar or regular sugar
cooking spray
1 tsp onion powder
1/2 tsp paprika
1/2 tsp garlic powder
sea salt & pepper to taste
Chili
1 medium/big onion, chopped
4 cloves garlic, finely minced
1 green pepper, chopped
1 small/medium carrot, grated
5-6 medium diced fresh tomatoes (560 g) or use canned (20 oz)
6 tbsp tomato paste
2c water or vegetable broth
4c cooked or canned beans (e.g. kidney beans, black beans, pinto beans, white beans, or 1 cup of each)
2 tsp coconut sugar or sub brown sugar or any other sweetener like maple syrup
spices: 1 tsp ground cumin, 1 tsp onion powder, 1 tsp garlic powder, 3/4 tsp salt or less if you use vegetable broth, 1/2 tsp black pepper, 1/4 tsp smoked paprika, 1/4 tsp hot chili powder
1-2 hot red chili peppers (I used 1, my boyfriend prefers 2)
2 tsp oil or water for frying
Vegan Cheese
Homemade vegan cheese sauce or store-bought vegan cheese of choice
Instructions
Peel the potatoes and cut them into about 1/2 inch-wide sticks.
Place potato sticks in a bowl, sprinkle sugar over them. Set aside until liquid is released from the potatoes (20-25 min).
After 15 minutes, preheat oven to 425F/220C and line 1 large baking sheet with parchment paper. Spray with cooking spray.
Drain liquid from potatoes and dry them well with kitchen paper.
Coat fries with the seasonings. You can also use cooking spray on them to make them even crispier but they also turn out crispy without oil.
Spread the fries into a single layer on the baking sheet and bake for about 30-40 min or until golden brown and crispy. Flip halfway through.
Meanwhile, start making the chili. In a large pan or pot over medium heat, add in the oil. Sauté the onion and pepper for about 3-4 minutes, add the garlic and sauté for an additional 1-2 minutes, stirring occasionally.
Mix in the tomatoes and sauté for another 2-3 minutes.
Now add all remaining ingredients, increase the heat and simmer for about 30-40 until thickened, stirring occasionally.

Chocolate, raspberry and chia jam celebration cake by @panaceas_pantry!! 🍫🍰

Ingredients (almond brownie base). 3/4 cup almonds (activated)
1/4 cup shredded coconut
1 Tbsp cacao/cocoa powder
Pinch salt
6 medjool dates, pitted
1 Tbsp roast almond butter
1. Add first 4 ingredients to a high-speed food processor and pulse until small crumbs form.
2. Add dates and almond butter and pulse. Add an extra date if the mix isn’t sticky enough. Press base into a lined 7 or 8 inch springform cakepan.
Chocolate layer
1 1/2 cups raw cashews, soaked 4 hrs then drained
2 Tbsp cacao powder
1 tsp vanilla extract
1/2 cup coconut milk
1/3 cup pure maple syrup
30g cacao powder, melted*
1 Tbsp coconut oil, melted*
1. Add all ingredients to a high speed blender and blender until silky smooth. Pour over base and set in freezer for 30 mins.
Raspberry chia jam
1 cup raspberries
1 tsp chia seeds
1 tsp pure maple syrup
Splash water
1. Add all ingredients to a saucepan and cook over low heat for approx 10 mins, stirring throughout. Allow to cool for 10 mins, then spread over chocolate layer. Set in freezer while you make the next layer.
Raspberry layer

Stuffed and baked potatoes are such a popular dinner option, and why wouldn't they be - they're simple, delicious, and perfect for adding your own distinct touch!
Recipe
Ingredients:⠀
4 medium sweet potatoes⠀
1-15 ounce can chickpeas⠀
1 tablespoon olive oil⠀
1 teaspoon kosher salt⠀
1/2 teaspoon black pepper plus more for serving⠀
1/2 teaspoon cumin⠀
1 cup baby spinach, roughly chopped⠀
2 tablespoons tahini⠀
Flaky sea salt for serving⠀
Crushed red pepper flakes for serving⠀
⠀
How To Make:
Preheat the oven to 375 degrees F. Prick the sweet potatoes with a fork and roast for 45-55 minutes until they are just tender. Let the sweet potatoes cool for 5-10 minutes before halving them lengthwise and fluffing their flesh with a fork.⠀
While the sweet potatoes are roasting, make the crispy chickpeas. Drain and rinse the chickpeas. Pat them dry with paper towels. Remove any loose outer skins. In a small bowl, toss the chickpeas with 1/2 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and cumin. Spread them in a single layer on a parchment paper-lined sheet pan. Bake for 25 – 35 minutes until crisp and browned, gently shaking the pan about halfway through cooking.⠀
While the sweet potatoes and chickpeas are roasting, heat the remaining olive oil in a large skillet over medium high heat. Sauté the spinach until the leaves start to wilt, about 2 minutes. Add the garlic and remaining salt and pepper, and continue cooking until fragrant, about 1 minute.⠀
Top each of the sweet potato halves with chickpeas and spinach. Drizzle with tahini and sprinkle with flaky sea salt and red pepper flakes before serving. Enjoy!

1/2 cup rolled oats
1 tbsp ground flaxseed
1 tsp fresh ginger, minced or 1/2 tsp ginger powder
1 tbsp coconut flakes
1/4 tsp vanilla extract
1 cup almond milk
1 banana, sliced 🥥

Combine all ingredients in a saucepan and stir to combine. Bring to a simmer over low to medium heat for 3-5 minutes, stirring to prevent sticking. Remove from heat and serve in a bowl topped with fruit. 🥣

Can you believe i was terrified of eating chocolate and nut butter/seed butter together because both were fat sources and i guess in my ed i conditioned myself to fear these things. I went to @marksandspencer and picked up a couple of their 2 for £3.50 salad pots (the super greens salad & red pepper/quinoa pots to be precise) and I threw it all together in a big standard side salad. Each of the pots had their own dressing that I threw in together, tasty fucking good and cost about the same as a sandwich would from on of the local lunch places. 🌿Bom dia com um potão de requeijão de tofu! Um creminho bem curinga, que além de utilizar para passar em pães, torradas, panquecas, aveiocas, fica ótimo pra dar cremosidade em arroz, strogonoff, lasanhas, legumes, comer com salada ou acrescentar no macarrão, por exemplo.

🌿 REQUEIJÃO DE TOFU

- No mixer bata bem até obter um creme lisinho:
• 150g de tofu
• 2 colheres (sopa) de polvilho azedo
• 1 colher (chá) cheia de polvilho doce
• 2 colheres (sopa) de suco de limão
• 1 colher (sopa) cheia de levedura nutricional (opcional)
• sal
• 1/3 (xícara) + 4 colheres (sopa) de água.
- Transfira esse creme para uma panela e em fogo médio mexa sempre por cerca de uns 5-8 minutinhos. Vai engrossar dar uma engrossadinha, pode até criar pequenos grumos, não tem problema. Passe o creme novamente para o mixer e bata com mais 4 colheres (sopa) de água até obter o creme lisinho. Despeje num potinho de vidro e armazene na geladeira por 3-5 dias.

💚 Ajuste os temperinhos de acordo com sua preferência. Vale saborizar com ervas finas, azeitona preta, acrescentar cenoura cozida pra ter um creme mais amarelinho ou um pedacinho de beterraba para um creme rosa, salsinha ou espinafre para um creme verde (esses coloridinhos fazem sucesso com meu filho e os amiguinhos!). Como sempre entramos no rol das infinitas possibilidades, né?! Só usar a criatividade.

Stopped by at this cute little place called @acaiberryfoods in 📍 Boxpark, Shoreditch - I ordered the 'Rio' Suprerfood Acai Bowl and it was so fruity and delicious! I also ordered a 'Matcha Me Up' super juice! Definitely at my happiest right now! Will be back for sure 😊🍌🍓🌱❤

Growing up in Germany with busy hard working parents, I spent most weekends in my mom’s Chinese restaurant. I didn’t mind, I was a quiet kid and good at entertaining myself drawing or making little crafts sitting at the table in the corner of the restaurant. Also, my mom would allow me to eat whatever I wanted. One of my favorite dishes was Sweet and Sour Pork -battered, deep fried chunks of pork drenched in sweet and sour sauce with pineapple, onions and bell peppers. I’m not gonna lie, I still salivate over this memory.
Fast forward 25 years, the other day I made this sticky crispy sweet & sour cauliflower tofu dish, it was so good, it literally transported me back to that childhood memory! Something about the sauce, something about the crispy texture.. I don’t even know. You see, it’s not necessarily always the actual taste of the meat that we crave, it’s the memory of it and the memory of how it made us feel. Eating is indeed a very emotional act, we get attached to certain things because of habit but also the memories (of family, tradition, culture) we associate them with, that’s why it’s so hard to change and we get so defensive about our food choices.
Most vegans didn’t become vegan because all the sudden they didn’t enjoy the taste or memory associated with meat (or milk, cheese, eggs) anymore, but rather, because they realized that their ‘personal taste’ was no longer a personal matter, but cost the life of a sentient animal that did not want to die.
And once this connection is made, there is no turning back. All the sudden it becomes so clear and easy. Knowing that every meal they choose embeds love and compassion and no longer comprises torture, suffering and killing.
Vegan food can build new positive memories!
