🌱Recipe smokey black bean + corn burger: In food processor, pulse 1-1/2 cups black beans until partly mashed with some whole beans remaining. Boil 1 large corn on stovetop and remove kernels with sharp knife once cooked. (Even better if you can roast the corn over a gas burner.) Combine in a large bowl: mashed beans, corn kernels, 1 finely diced large red onion, 2 large handfuls baby spinach leaves (roughly chopped), 1/2 cup cilantro (chopped), 2 tbsp tahini, 2 tbsp coconut aminos or low-sodium tamari/soy sauce, juice 1 lime, 2 tsp smoked paprika, 1 tsp garlic powder, 2 tsp ground cumin, 1-2 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add oat flour until sticky enough to form patties (no more than 1 cup). Use hands to make roughly 7 burgers. Burgers shouldn’t be too thick or they won’t cook as well. (Optional: brush surface of burgers with a little olive oil.) Bake on lined baking sheet at 375F about 25 minutes, flipping half way. (Or you can even air fry these at 400F about 15-20 minutes.) 🌱Recipe: Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Steak Kebabs are the one of the best summer dinners! These are layered with juicy tender pieces of flavorful, marinated beef and colorful blend of tender veggies. . The perfect thing to make for the holiday.

Ingredients
Marinade 1/4 c olive oil1/4 c soy sauce1 1/2 tbsp fresh lemon juice1 1/2 tbsp red wine vinegar2 1/2 tbsp Worcestershire sauce1 tbsp honey2 tsp Dijon1 tbsp garlic1 tsp freshly ground black pepper Kebabs 1 3/4 lbs sirloin steak (look for thicker steaks), cut into 1 1/4 inch pieces8 oz button or cremini mushrooms, halved (unless small, keep whole)3 bell peppers (1 red, 1 green, 1 yellow) cut into 1 1/4-inch pieces1 large red onion diced into chunks (about 1 1/4-inch)1 Tbsp olive oil, plus more for brushing grill gratesSalt and freshly ground black pepper1/2 tsp garlic powder10 wooden skewer sticks soaked in water for at least 30 minutes.
Instructions
For the marinade: In a mixing bowl whisk together all marinade ingredients. For the kebabs: place steak into a gallon size resealable bag. Pour marinade over steak then seal bag while pressing out excess air and message marinade over steak. Transfer to refrigerator and allow to marinate 3 - 6 hours. Preheat a grill over medium-high heat to about 425 degrees (partway through preheating clean grill grates if they aren't already clean). With veggies on cutting board, drizzle with oil and lightly toss to coat (I actually don't toss the onion because I like it to stay in chunks, when you thread the onion on layer in chunks about 2 - 3 slices so they don' t burn up). Sprinkle veggies evenly with garlic powder and season with salt and pepper. To assemble kebabs layer steak and veggies onto kebabs in desired order, work to fit 4 steak pieces onto each kebab (I like to layer 2 onion slices together). Brush grill grates lightly with oil. Place kebabs on grill and grill until center of steak registers about 140 - 145 degrees for medium doneness, turning kebabs occasionally, about 8 - 9 minutes. Serve warm.

1 1/2 to 2 lb salmon filet
2 bunches 2 lbs asparagus
Salt and Black Pepper
1 Tbsp Olive Oil to drizzle asparagus
1/2 large lemon sliced into rings for garnish
For the Flavored Butter:
6 Tbsp 85 grams* unsalted butter, softened
2 Tbsp fresh lemon juice from 1/2 large lemon
2 garlic cloves pressed
2 Tbsp fresh parsley finely chopped, plus more to garnish
1 tsp salt
1/4 tsp black pepper

Instructions
Prep:
Preheat oven to 450˚F with oven rack in top third of oven. Line a large rimmed baking sheet with parchment paper and trim paper so edges to fit the pan, otherwise it can char in the oven, especially when broiling.
How to Make One-Pan Salmon and Asparagus:
1. In a small bowl, mash together all flavored butter ingredients, mashing and stirring until lemon juice is incorporated into butter then set aside. It takes a couple minutes but it will come together.
2. Place salmon filet skin-side-dow in the center of your baking pan. Rinse asparagus and break off fibrous ends by holding the base end and breaking it wherever it snaps. Arrange asparagus around salmon, drizzle asparagus lightly with olive oil. Roll asparagus to coat lightly in oil and sprinkle both asparagus and salmon with salt and pepper.
3. Spoon and spread 3/4 of butter mixture over salmon. Dot asparagus with remaining herb butter. Scatter with slices of lemon and bake at 450˚F for 10-12 mins (smaller 1 1/2 lb thinner fillet will take 10 min and a larger 2 lb fillet will take 12 min), then turn the oven to Broil on High and broil 2-3 minutes to give the salmon a golden glow. Bake until salmon is flaky and cooked through.

3 cups vegetable stock
1/2 cup curry paste, I used @chefschoicefoods massaman curry paste
3/4 cup coconut milk @chefschoicefoods
1 tsp chili powder
1 tbsp curry powder
2 tbsp vegetable oil
1 yellow onion
2 tbsp sliced lemongrass, white part only (slice off the lower bulb)
6 curry leaves
Salt & sugar to taste .

Wonton wrappers
2 cups all purpose flour
1 cup boiling water
Pinch of salt .
Curry tofu filling
1 block of firm tofu, drained & crumbled
1 yellow onion, diced
1 cup pak choy, julienned
1 cup spring onion. diced
1 tbsp minced ginger
2 cloves minced garlic
2 tbsp curry paste, @chefschoicefoods massaman curry paste
1 tbsp vegetable oil
Salt and pepper .

To make the soup
Heat vegetable oil in a pot over medium heat. Add curry paste and cook until fragrant. Add vegetable stock and cook over high heat. Then stir in onions, lemongrass and curry leaves. Once it boils, lower the heat and allow to simmer for 10 mins. Add coconut milk and cook at high heat again. Once it boils, lower the heat. Add salt and sugar to taste. .

Filling
In a large skillet over medium high heat, add oil and cook onion. ginger, garlic until fragrant. Add tofu, pak choy stir-fry for another 2 mins. Then add the curry paste and mix well. Stir in spring onion. Turn off the heat.

In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 10 mins. Lightly dust your counter-top, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. .

Take a wrapper, add about 1-2 teaspoons of filling. Wrap and firmly steal. .

To make the salted dark chocolate peanut butter & jelly cups, you will need:
• 1 cup @navitasorganics cacao powder
• ½ cup organic virgin coconut oil, melted
• ¼ cup 100% pure maple syrup
• 1/2 cup creamy organic peanut butter (can also do almond or sunflower butter)
• 1/3 cup raspberry chia jam
• @redmondrealsalt unrefined sea salt
• Large or small baking cups (for muffins/cupcakes)

Combine cacao powder, melted coconut oil, and maple syrup in a medium mixing bowl and stir until consistency is smooth.

Line a muffin pan with parchment baking cups and evenly divide chocolate mixture into the base of each baking cup.

Note: Make sure the mixture is warm/hot when pouring into baking cups since cooled chocolate mixture will be thick and hard to pour.

Next, add peanut butter to a small bowl and mix with ~2 tbsp almond flour to thicken it up (should have consistency of watered down play-doh). It also helps to refrigerate the peanut butter before hand so it’s not as runny and holds shape (in this case, add half amount of almond flour). Add peanut butter on top of bottom chocolate layer.

Next, add a dollop of raspberry jam atop the peanut butter and spread evenly. Fill the rest of the cups with remaining melted chocolate (may need to reheat so pours over easily). Top with a sprinkle of sea salt. Freeze for 2 hours and then store in the refrigerator. Enjoy!

- 230g de haricots rouges rincés et égouttés
- 2 oeufs
- 30g de sucrant (sucre de coco)
- 150g de chocolat noir 70%
- 5cL de lait (végétal ou non) - 2 cas de levure chimique
- 1 cac d'arôme vanille
- 1 poignée de pépites de chocolat

👉 Mixer les haricots rouges jusqu'à obtenir une texture lisse.
👉 Ajouter les œufs, le lait, le sucre, l'arôme vanille et la levure puis mélanger à nouveau.
👉 Faire fondre le chocolat au micro-ondes avant de l'ajouter au mélange.
👉 Terminer en ajoutant les pépites de chocolat.
👉 Faire cuire 20 à 25 minutes à 180°.

Ce brownie est si moelleux et tellement gourmand avec les pépites de chocolat... Personne ne devinera qu'il contient des haricots rouges et vous pourrez en manger (presque) autant que vous voulez en prenant soin de vous !

very berry smoothies bowl 🍓🍒:
- 1 frozen banana
- 1c frozen caul rice
- 1/4 avocado (can be frozen or fresh)
- 5 frozen strawberries
- a few chunks of frozen zucchini - 1/4 cup frozen berry medley (i get mine at tj’s)
- spoonful flax
- vanilla or berry plant based protein (ive also used the dark chocolate blackberry collagen from vital proteins before)
- spoonful peanut butter (can omit)
just throw the ingredients in your blender with your desired amount of liquid (i do as little as possible so its THICK) and then top with what you like! i did @barbarasbakery puffins, some frozen bluebs and a crumbled @emmysorganics chocolate coated pb cookie bite 🍫

ᴅɪʀᴇᴄᴛɪᴏɴs:
1. In a small microwave-safe bowl, add chocolate morsels, Hanks protein spread and almond milk
2. Microwave on high for 15 second intervals, stirring after each interval until melted
3. Add rice cereal to a big bowl
4. Sprinkle 1 scoop of the Level-1 protein powder over the cereal and mix until coated
5. Drizzle the melted chocolate mixture over the cereal and stir until it completely coats the cereal
6. Sprinkle the other scoop of the Level-1 protein powder and stir until it completely coats the chocolate covered cereal

『 Summer Vibes Dressing 』

➥ Ingredients
- half of a ripe hass avocado
- 1 small mango (ripe) or about half of a very large one
- generous amount of cilantro; I personally used a big handful, stems included
- 1 mint leaf
- the juice of half a lime
- 1/4 tsp cayenne pepper
- salt to taste
- water to achieve your desired consistency

➥ Steps
1) Blend your avocado, mango, cilantro, mint, lime juice, cayenne pepper, salt to taste, and a 3/4 cup water in a blender. I honestly don't remember how much water I ended up using :^) but just keep adding water until you find the consistency is perfect for your tastes!
2) Once the dressing is smooth and ready to use, pour it into a sealed jar and store in the fridge.

Imagine eating creamy avocado, fresh cilantro + mint, and ripe mango all in one bite. While the flavor combination might initially sound odd to some, I assure you it makes for a rich explosion of flavor tingling with freshness. I wanted to make a bowl for lunch that would keep me full and embody the sort of summery tastes we all crave in the heat, and I'm heccin' sure I succeeded! ♡ • • • 『 Summer Vibes Dressing 』 [[makes a lot!]] ➥ Ingredients - half of a ripe hass avocado - 1 small mango (ripe) or about half of a very large one - generous amount of cilantro; I personally used a big handful, stems included - 1 mint leaf - the juice of half a lime - 1/4 tsp cayenne pepper - salt to taste - water to achieve your desired consistency ~~~~~ ➥ Steps 1) Blend your avocado, mango, cilantro, mint, lime juice, cayenne pepper, salt to taste, and a 3/4 cup water in a blender. I honestly don't remember how much water I ended up using :^) but just keep adding water until you find the consistency is perfect for your tastes! 2) Once the dressing is smooth and ready to use, pour it into a sealed jar and store in the fridge. ~~~~~ Pictured is a mango/avocado salmon bowl; I baked the salmon with a bit of garlic powder and fresh dill, and then made a bed of spinach in my bowl to which I added brown rice, red cabbage/carrot mix, lightly smashed avocado topped with sesame seeds, freshly sliced mango, and pickled onions. 100 ml Kokosmilch
100 gr. feine Haferflocken
1 Packung Schoko Puddingpulver
30 gr. dunkle Schokolade
2 EL Honig
In einem kleinen Topf die Milch und die Kokosmilch verrühren und aufkochen.
Die Haferflocken und das Puddingpulver vermischen, zu der Milch geben und sehr gut verrühren. Jetzt die Wärme reduzieren.
Sobald es beginnt anzudicken, die Schokolade und den Honig unterrühren.
Die Schoko-Puddingoats können warm oder kalt gegessen und nach Belieben dekoriert werden.

SPICY BAKED EGGS WITH PANEER & BUTTER BEANS 🔥
Put your hands up if you love baked eggs 🙋🏻‍♀️ This dish is perfect for breakfast, lunch or dinner and really fills a hole. It also required very little work (you literally pop everything in a pan and let it all simmer together) which is ideal when you have a busy day scheduled.
First I fried onion and garlic with cumin seeds, curry leaves and cardamom and then popped in the butter beans and paneer and seasoned it with some harissa. Then I added 1 tin of tomatoes, a little bit of coconut milk and two eggs. Sprinkle on a bit of za’atar and fresh coriander and bob’s your uncle 👍🏼

Junte o chocolate com essa mistura, coloque em um recipiente pequeno untado com manteiga. Leve ao forno preaquecido por a 180° por 10 minutos. Fique de olho no tempo de forno, se passar do ponto, vira um brownie.

I tried the “Minnie” @fenixfitco bar. I’m a sucker for red velvet and this was good. Enough white chocolate yo add some taste, also only 240 calories for the entire bar. I haven’t found a flavor I don’t like yet, may have to bring some on vacation next week!

Honestly my summer hasn’t been exactly what I would have wanted it to be, but what are you gonna do? Be mopey about it or make the best of every situation and roll with it.
Yeah. I haven’t been 100% with my fitness this summer but overall I’m happy. It’s been more of a different focus and more of a 80%. This summer I focused on being happy with myself and being athletic more than fit. Not worrying about impressing people or being “enough”. Can’t say it was a success but...it’s a hard thing. I also had a lot of emotional hardships throughout the summer which didn’t help with my motivation at all. Yes. Some days I just slept, ate, cried and prayed. And that’s okay. Sometimes you need that.
As the summer is coming to an end you gotta remind yourself that no matter what happens to be content and happy with what you did and what you got. It’s very easy to compare our lives on social media which sucks, I know. We all have different lives and different situations that aren’t all sunshine and rainbows like it seems.
Remember everyone has there struggles even though they might not show it.
Go out today and be 𝐇𝐀𝐏𝐏𝐘 & 𝐒𝐌𝐈𝐋𝐄. Make the best of today even if it’s hard. Do something for yourself!
