Love that little extra chew from the barley... The crust was so lovely in all of its crispy crackliness (is that a word?). Pairs perfectly with salted butter 😋 And what a beautiful dough it was at a full 89% hydration! Really soaked up all that water and left me with a puffy, soft dough of my dreams. See previous post for dough photos taken before and after final cold proof (650g dough in a 9'x5'x4' banneton, baked straight from the fridge). And see below for full recipe specs!

Specs: All hand mixed 💗 285g *autolysed* flour (313.5g total flour including the flour from the levain). Autolysed 2.5 hours: 250g water with 8% (25g) home milled pearl barley, 12% (38g) home milled spring wheat berries (@bobsredmill), & 222g bread flour (@kingarthurflour). 30 min later, added 20% (57g) levain (100% hydration, 1:1:1, 5 hours 80°F). 30 min later, added 2% (6.3g) sea salt. 89% final hydration.
6.25 hour total bulk ferment at 75-76°F with 1 light fold, 1 lamination separated by 30 min. Sprinkled on 15% (48g) cooked and cooled pearl barley didn't lamination. 2 coil folds separated by 60 min. 2 additional half-coil folds separated by 30 min.
Final 1 hour of bulk, left untouched.
Shaped, then RT proof 20 min, then moved to the fridge (38°F) overnight 12 hours.
Baked using @challengerbreadware vessel (485°F lid on 20 min, 450°F lid off 20 min).

Happy Monday, dears! I hope you won’t mind that from now on my homemade bread will be a frequent hero of my posts 💛. This whole sourdough thing really got me and we are getting into a serious relationship 😄🙈.

No bread recipes from me, at least for now, as I’m still a newbie myself and need to learn so many things about baking real bread 🤓. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
What I can do is share the profiles of two great bakers, who inspire me lots with their sourdough recipes and images:
💛 Edd @theboywhobakes - I followed his YouTube series to grow my starter and to make my first sourdough loaf.
💛 Maurizio @maurizio - whose blog is full of amazing sourdough recipes and I can’t wait to try them all !

В моем профиле теперь будет хлебушек 💛. Не каждый день и наверно даже не каждую неделю, но он тут будет, потому что все эти танцы с закваской меня лихо затянули и в ближайшее время отпускать не собираются 😄💃. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Отвечу тут же на вопрос, который сыпется в директ теперь после сторис с хлебом «Рецееепт??!!». А рецептов хлеба тут не будет 🙈. Потому что а) закваска - дело не быстрое и не самое простое; б) из 30 с лишним тысяч подписчиков, дай бог, сотне рецепт будет нужен; в) я не волшебник, а только учусь, и все это дело ещё в новинку для меня самой.

Но источниками вдохновения и полезной информации поделюсь с удовольствием 😊. Пока я все пеку по материалам Эда @theboywhobakes - у него все чётко и по полочкам 👌. Fell in love with this dough throughout the bulk... soft and light and puffy, my favorite qualities in a dough. Incorporated some Italian pearl barley that I found in my pantry! First, I milled the barley (8%) into a fine flour to add to my autolyse, milled alongside some red spring wheat (12%) as well. The dough was *incredibly* stiff at first, so I ended up adding more water up to 89%! During the lamination, I added in some whole, cooked barley (15%) as well to add a bit of texture and chew.

Note that my dough doesn't rise much at all, and actually appears to fall or relax in the banneton overnight. But such a lovely spring after loading into the hot oven! 😍💕 More details to come with the crumb photo soon...!

Banana Bread with honey and applesauce instead of sugar & oil. Delicious & Healthy.

Ingredients:
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar free applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas
Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. #breadbaking #bread #breadmaking #recipes #healthyfood #healthyrecipes

Added sugars refers to a category that includes a variety of caloric sweeteners, including sugar and many others sweeteners that are classified as sugars. Added sugars do not include non- and low-calorie sweeteners. The term “added sugars” was defined by the Food and Drug Administration (FDA)2 in 2016 as: sugars that are added during the processing of foods, or are packaged as such, and include sugars (free, mono- and disaccharides), sugars from syrups and honey, and sugars from concentrated fruit or vegetable juices that are in excess of what would be expected from the same volume of 100 percent fruit or vegetable juice of the same type.
